GLUTEN FREE CHEESY BURGER CASSEROLE

Who doesn’t love a big, juicy, full of flavor burger with all their favorite toppings and sauces? Every time I make burgers I try to add something different like a good amount of herbs or a new sauce or pickles and such simple adjustments always work. For those with gluten restrictions, living in a country where ready made gluten free burger buns aren’t available as regular ones, making burgers take some pre planning to make and bake gluten free burger buns before deciding flavors of burger patty and shortlisting sauces and condiments to compliment the flavors.

Don’t get me wrong I do take my burgers very seriously and have shared some on the blog too including Gluten Free Burger Buns and Mini Gluten Free Burger Buns with a variety of assembly options, sauces and patty flavors like Burger – Fully loaded, Mozzarella and Jalapeno Stuffed Grilled Burger, Gluten Free Chicken Burger, Mozzarella and Jalapeno Stuffed Grilled Burger, Grilled Peri Peri Burgers, Grilled Cheese and Herb Burgers with Plum Chutney plus Gluten Free Burger Bun Recipe and yet there are times when not having gluten free buns at hand can be a buzz kill when you are craving a satisfying burger.

“What you seek is seeking you.” I honestly don’t believe in such a thing unless it is food related. Being an old school in many aspects my “likes” and “subscriptions” are old school too like Betty Crocker and Nestle. Betty Crocker will always be close to my heart (and taste buds) because it’s cake mixes make me feel like Nigella Lawson in the kitchen with those perfectly risen, soft, spongy, met-in-your-mouth cakes and oh-so-fudgy brownies. A while ago there was a collection of minced meat recipes in a newsletter which included “An impossibly easy hamburger pie” and there was a gluten free version too. Unlucky for me, there was Gluten Free Betty Crocker Bisquick mix required for the recipe which is not available locally. Hash tag that sad feeling.

The heart wants what the heart wants and since my heart is so close to my stomach that sometimes it actually falls in the stomach. I really hope my husband doesn’t read this post or I’ll be getting a refresher lecture on “Human Anatomy For Dummies” but hey this is exactly how I feel and in this case I am not even being selfish rather I am being the opposite of selfish because I am not the one who is gluten allergic and totally free to have wheat products. But I feel bad that two of my family members can not be that casual about what they are eating (this makes me border line saint…does it?) so I try to accommodate everyone in one single casserole meal, that has all the elements and flavors of a burger, and with some adjustments I was able to accomplish that.

So there are three layers to the dish which combine during baking, one is minced meat, second is cheese and third is bisquick mixed with other liquids. Use cooked minced meat and jazz it up with seasoning and a fresh touch of herbs. Next cover minced meat layer with shredded cheese and then pour the flour/bisquick layer. Instead of bisquick, I used Homemade Cuisine’s Gluten Free Baking Flour with some cold butter to replicate shortening like texture and worked! If you don’t have access to the gluten free baking flour I used or any other baking flour that is no problem either. Use a combo of white rice flour, potato starch and tapioca flour as given in the recipe notes and prepared to be amazed. Make sure to keep butter really cold and add it at the end while whisking gluten free flours and liquids.

Bake, rest it for 5-10 minutes to help get things settle down, slice and top it with whatever sauce or condiments you like. I have used ketchup, mustard and mild Peri Peri sauce and served it with some fresh salad. Options are endless here and if there are no dietary restrictions, use regular all purpose flour instead of gluten free baking flour and follow the same instructions.

GLUTEN FREE CHEESY BURGER PIE

All the elements of a juicy burger, bursting with flavors, in a casserole which saves time and feed a crowd.

INGREDIENTS

  • 450 gm minced beef, cooked
  • 1 large onion, sliced or chopped
  • 1 tsp salt
  • ¾ tsp red chilli powder
  • ½ tsp black pepper powder
  • ½ tsp dried basil
  • ½ tsp dried thyme
  • 1 tsp dried parsley
  • 1 cup shredded cheese I used ½ cup cheddar, ½ cup mozzarella
  • ½ cup gluten free baking flour see notes
  • ½ tsp salt
  • ¾ tsp baking powder
  • 2 large eggs
  • 1 cup milk
  • 3 tbsp cold unsalted butter, grated

INSTRUCTIONS

  1. Preheat oven at 350 F/ 180 C.
  2. Grease a 9″ round pie pan or a square or rectangular oven proof glass dish.
  3. In a medium pot combine cooked minced meat with sliced onion over medium flame.
  4. Add salt, chilli powder, black pepper powder, dried basil, thyme and parsley. Stir well.
  5. Cook for about 2-3 minutes, stirring at regular intervals, till onion is slightly softened. Remove from heat.
  6. Put minced meat mixture in to the greased glass dish, spread evenly with a spoon. Top with shredded cheese.
  7. In a medium mixing bowl whisk together gluten free baking flour, salt, baking powder, eggs and milk. Add grated cold butter.
  8. Pour this mixture over the minced meat and cheese layer.
  9. Bake for 25 minutes or till a knife inserted inside comes out clean.
  10. Remove from the oven. Rest for five minutes before slicing.
  11. Serve with mustard, ketchup, olives, pickles or any other sauce or topping.¼

RECIPE NOTES

I have made this pie with Homemade Cuisine’s gluten free baking flour as well as a home mix of gluten free flours. Both worked absolutely perfect. 

For home mix, simply combine 1/4 cup white rice flour+ 2 tbsp potato starch+ 2 tbsp tapioca flour.
