Super Moist Gluten Free Vanilla Cupcakes with Chocolate Frosting

It’s been awhile, I know 🥲So the vacation mode is on and since I don’t have my gear with me, things are going to be real simple. Made these super moist, super easy, one bowl vanilla cupcakes to celebrate a special occasion.
Recipe:
2 large eggs, room temperature
3/4 cup caster sugar
1/2 cup vegetable oil
1 1/3 cup gluten free flour (I used @divided_sunset all purpose gluten free flour, feel free to use any gluten free baking flour like Asmr’s Gluten Free Baking Flour)
1 3/4 tsp baking powder
1/3 tsp salt
1/2 cup milk
2 tsp vanilla extract
Chocolate Frosting @bettycrocker
Instructions:
Grease a muffin tray. (Or line with paper liners, I didn’t have any!)
Preheat oven at 180C / 350F.
Beat eggs, sugar and oil together for few minutes.
Add in flour, baking powder and salt.
Pour in milk.
Beat for another minute.
Pour batter into 12 holes muffin tray and bake for about 18-20 minutes.
Once baked, remove from the pan. Let them cool down completely and frost.
