Cherry Cheesecake Bites

TADA!!!! This is my 50th post. Can not believe I am enjoying it so much. ( I have this tendency to get bored and give up quickly) Thank you so very much all of you out there following, reading and commenting. Really means alot to me.

I wish I could tag this with a country and call it my 2nd stop of “Around The World…”! Can I blame the jetlag? Nah. Actually I keep my posts ready a little ahead of time and that ATW idea got me off track but anyways I have to share this one. Why? It is easy, quick (if you are making it in cooler days),  it has all the elements of cheesecake, it is no bake , requires only 5 ingredients, great for parties, it is pretty and YUMMY.

ingredients: ( around 18 pieces depending on the size)

250 gm cream cheese

3 tbsp butter, at room temperature

3 cups icing sugar

1/2 cup chopped canned cherries

1 1/2 cups crushed cereal (regular or gluten free), chocolate or vanilla flavoured

method:

Combine cream cheese and butter in a mixing bowl. Beat cream cheese and butter together till light and fluffy with an electric mixer, around 2-3 minutes. Add icing sugar, half cup at a time. Continue beating, scraping the bottom and sides of the bowl after each addition. Stir in cherries and refrigerate for an hour.

Take about two tablespoon of the cheese mixture and form balls of desired size. I used an ice cream scoop and it made shaping extremely easy. Place these balls on a butter paper lined tray and refrigerate again for 30 minutes. Roll in crushed cereal. You might need to press the crushed cereal on to the cheese balls for a quick coating. Place in mini cupcake cases, cover and refrigerate for at least 5-10 minutes before serving.

note:

I used vanilla flavoured gf cereal and regular chocolate flavoured cereal. You can use crushed cracker crumbs or leftover cake/brownie crumbs. Crush them very fine or roughly. I like to add texture to food whenever possible so I went with roughly crushed.

You may require a little more or less of icing sugar depending on your kitchen temperature and cream cheese quality. Icing sugar has added cornflour in it which will help firm the mixture. Do not use granulated sugar or powdered sugar.

    1. Try with small quantity first. Strawberries can release a lot of water.
