Fudge Cupcakes

DSC_0272                                                                                      I am a big fan of the idea of cupcakes. They require short baking/cooling time and easy portion control. This an extremely simple, insanely moist and delicious recipe. Always use fresh and good quality ingredients and get perfect results.

ingredients : yields 12 cupcakes

1 and 3/4 cups flour

1/4 cup cocoa powder

1/2 tsp salt

1 tsp baking powder

1 tsp baking soda

1 cup brown sugar

1 egg, lightly beaten

1/3 cup cooking oil,canola,sunflower or corn

1/2 cup full fat milk

1 tsp vanilla essence

1 and 1/2 cup semi sweet chocolate chips,can use a combo of white and brown

method :

Pre heat oven at 180 C. Line cupcake pan with paper liner. Sift together flour,cocoa powder,salt,baking powder and baking soda in a large bowl. Add brown sugar. Stir to mix. Combine egg,oil,milk and essence in a separate medium bowl. Mix well and add to dry ingredients. Stir together. Add chocolate chips,mix.  Divide the batter between the prepared liners,filling them about three quarters full. Bake for 25-30 minutes,rotating the pans halfway through the baking.
