FUDGY GLUTEN FREE SIZZLING BROWNIE

(Re Posting: Due to an unfortunate error, I have to re post my gluten free recipes.) Who doesn’t like a warm chocolate brownie slice? For gluten free baking some tweaks and adjustments are required to make such gluten free treats taste great. This recipe is one of my favorite gluten free desserts.

Let the PSL begin on the blog… Pakistan Sweet League. I was thinking about doing some traditional trademark Pakistani dishes for the month of March in the honor of 23 March, Pakistan day and lucky for me PSL started too which gives me an opportunity to celebrate both events by incorporating Pakistani cuisine in the celebration. Since celebrations are synonyms to desserts in almost all the cultures around the globe our first post is a sweet one too which is associated with Islamabad.

Inspiration Behind This Gluten free Sizzling Chocolate Brownie

Food says a lot about the people, their culture, religion, tradition, geographic conditions and their preference. As mentioned in the previous post our beautiful capital Islamabad doesn’t have deep rooted culinary heritage unlike it’s twin city, Rawalpindi, rather it’s food culture is defined by it’s dwellers. There is a famous restaurant, aesthetically  situated in Margalla Hills that not only offers a breathtaking bird eye view of the capital but also known for it’s fantastic food. Their sizzling brownie is a one of the most liked menu item. I created this fudgy gluten free brownie following that same style.

Today’s recipe is showcasing that fabulous way of serving a slice of brownie while getting attention of everyone around when it is served. Please note that it is not the original recipe nor a copy cat version because it is a gluten free recipe which the restaurant does not serve and secondly it is only reflecting the style and combination it is served with. As you already may know or as the name suggests that this gluten free brownie is served on a hot sizzler plate with creamy gluten free chocolate syrup, a luscious gluten free fudgy brownie chunk that is topped with a generous scoop of vanilla ice cream and drizzled with more chocolate syrup.

Gluten Free Brownie With Corn Flour

As the name suggests, the recipe requires brownie so today’s main recipe is this gorgeous gluten free brownie which is made with just one flour, corn flour. This gluten free brownie recipe is easy and definitely a recipe for beginners too. We beat eggs and brown sugar until well aerated, then corn flour with a dash of salt and coffee is folded in. Both salt and coffee enhance the sweetness and richness of the brownie. Then a melted mix of dark chocolate and butter joins the club and then it is baked. There is no leavening agent in this brownie so it collapses a little as it cools down.

When the brownie is cooled completely, it is time to have fun. Heat the metal plate of the sizzler and pour hot chocolate syrup over it. See those lovely bubbles on the platter?? Working quickly place a slice of brownie and a scoop of vanilla ice cream and pour some more hot chocolate syrup over the ice cream to make it melty too.

Gluten free Chocolate Syrup for the Brownie

My favorite chocolate syrup recipe is the one I posted very early when I started blogging. You can see the recipe here. It is so simple and easy to make with just water, sugar and cocoa powder. To balance, a pinch of salt is added in the end along with vanilla essence. You will be amazed by the simplicity of the recipe and will fall in love with the flavor. It works perfectly as topping for anything imaginable plus makes great chocolate milk. Make sure to use good quality cocoa powder for best results.

Feel free to add as much of chocolate syrup as you like. You are the boss. More is less my friend when it comes to rich chocolaty goodness.

I can stare at this for as long as I can but it is not an option. It needs to be served ASAP because the platter is hot and the chocolate sauce is hot and it is the whole purpose of this dessert that it should be enjoyed hot with the contrasting temperature of cold ice cream.

See all these layers of texture, consistency and temperature! How amazing is that. If you do not have a sizzling platter or you don’t want to serve it on one, there is another option that provides same contrast of hot and cold, serve brownie with ice cream and top with Chocolate Syrup.

FUDGY GLUTEN FREE SIZZLING BROWNIE

INGREDIENTS

  • 200 gm unsalted butter, cut in cubes
  • 300 gm dark chocolate, roughly chopped
  • 3 large eggs
  • 150 gm soft brown sugar
  • 75 gm corn flour
  • 1/2 tsp salt
  • 1 tsp instant coffee
  • Chocolate Syrup
  • Ice Cream

INSTRUCTIONS

  1. Line an 8 x 8 metal or oven proof glass dish with parchment paper, grease it lightly.
  2. Preheat oven at 350 F/ 180 F.
  3. Melt butter and chocolate in a heat proof glass bowl, over simmering water, making sure bowl is not touching the water surface.
  4. Beat eggs and sugar in a bowl using electric beaters till almost triple in volume.
  5. Add in corn flour, salt and coffee and fold.
  6. Fold in melted chocolate and butter mixture in to egg mix.
  7. Pour the batter in to prepared pan and bake for 35 minutes.
  8. Remove, let cool completely on a wire rack. Refrigerate for about 40 minutes before slicing.
  9. For serving, heat metal plate of a sizzler. Working quickly pour hot chocolate sauce, put a big square of brownie, top with a generous scoop of vanilla ice cream. Drizzle some more chocolate sauce. Serve immediately.
